This a very comforting meal that can be whipped up in no time after a hard day at work. Bonus: your kitchen and the entire house will smell amazing.

Kielbasa and Pasta Bake

Makes 6 servings


INGREDIENTS


1 pound (454 grams) polish kielbasa, cut into ¼- inch cubes
1 large onion, diced
2 cups tomato sauce
1 can (14.5 ounces) fire-roasted tomatoes
2 tablespoons pesto
Salt and pepper to taste
8 ounces mozzarella cheese, grated
2 ounces parmesan cheese, grated
1 pound of pasta, such as fusilli, cavatappi, or Gemelli, cooked 1-2 minute less than the package instructions call for.


DIRECTIONS

In a large skillet cook the kielbasa until fat is rendered over medium heat, about 5 minutes. Add the onion and cook stirring frequently until onion is translucent, for about 5-7 minutes. Add tomato sauce, fire-roasted tomatoes, pesto, and cook over medium heat for about 15-20 minutes. Add salt and pepper to taste. Add cooked pasta and about 1-1/2 cup of pasta water. Transfer to a 9” x 13” baking dish. Sprinkle the cheeses on the top. Bake covered with aluminum foil for about 30 minutes at 350 degrees Fahrenheit. Uncover and bake for an additional 10 minutes.
