Going back in time today. To my Grandma’s kitchen. Grandma would usually make proziaki when she was out of regular bread. It takes no time at all to make them.

Proziaki (Polish Soda Bread)

Makes 12 proziaki

INGREDIENTS

3 cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

¼ teaspoon salt

1 cup Greek yogurt

¼ cup milk or water

1 egg

DIRECTIONS

Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius)

In a large bowl, mix the dry ingredients. In another mixing bowl, whisk all the wet ingredients together. Add the wet ingredients to the dry ingredients and mix, with a wooden spoon, until a shaggy mass is formed.

Turn the dough onto lightly flour surface and knead until a ball is formed. With a rolling pin, roll out the dough to the 1-inch thickness.

Cut into circles with a 3-inch biscuit cutter. Transfer the circuits into a baking sheet, lined with a parchment paper or a silicone mat. Bake until golden brown, for about 15 minutes.
