Well, you can freeze them or bake angel food cake or bake Walnut Mazurek. Mazurek is a Polish Easter Cake. It is usually very sweet and flat. It probably originated in the Mazovia region of central Poland. Hence the name – Mazurek. It definitely deserves a place in the hall of fame of Polish desserts.

Walnut Mazurek

INGREDIENTS

8 egg whites

200 grams (7 ounces) sugar

60 grams (2 ounces) all-purpose flour

250 grams (9 ounces) walnuts, ground

DIRECTIONS

Preheat oven to 320-degree Fahrenheit (160-degree Celsius). Spray a 23-centimeters (9-inches) springform pan with a cooking spray.

In a large bowl, beat egg whites with an electric mixer until foamy. Gradually add sugar, beating until mixture forms stiff peaks.

Fold walnuts into egg whites until incorporated.

Transfer batter to the springform pan. Bake for about 1 hour.

Let it cool down to room temperature. Top it with ganache frosting. Decorate with walnuts pieces.
